Lunchbox delight or classy party treat, these protein-rich snacks are simple to prepare.

Ingredients

  • 1/2 cup self raising flour
  • 4 free range eggs
  • 1 1/2 cups milk
  • 1 finely chopped onion
  • 1 grated zucchini
  • 1/2 cup grated cheese and 1/2 cup crumbled feta
  • 1 cup diced lean bacon, ham or precooked potatoes and pumpkin
  • Shredded fresh parsley

Method

  1. Grease muffin tins and combine all ingredients (except feta) into a large mixing bowl
  2. Stir well and spoon into muffin tins
  3. Sprinkle with feta
  4. Bake moderate oven for 30 mins or until puffed and golden. 
  5. Serve with salad greens
