Recipe: Sweet corn and radicchio salad

Ingredients

• 100g baby spinach leaves chopped
• 3 treviso radicchio, chopped
• 100g smoked ham diced
• 200g canned sweetcorn, drained
• Juice of 1 lemon, strained
• 100ml olive oil
• Salt

Method

1. Put the spinach and radicchio in a salad bowl and add the ham and sweetcorn.
2. Put a pinch of salt in a bowl, add the lemon juice and stir to dissolve, then whisk in olive oil.
3. Pour the dressing over the salad and toss.
