Salmon patties

  • 1 170g can salmon
  • 1 free range egg
  • ½ cup bread crumbs using wheat-free bread
  • 1 teaspoon dill
  • ½ teaspoon coriander
  • ½ teaspoon sea salt
  • 1 onion diced
  • 1 medium potato, boiled
  • 1 tablespoon olive oil for cooking

Drain juice off salmon and combine with egg, bread crumbs, salt, cooked mashed potato, herbs and onion. Make patties about 2 inches/5 cm in diameter. Lightly fry in a pan in a little olive oil until brown on both sides. Takes about 10 minutes to cook.

Green salad

  • 2 cups mixed lettuce leaves
  • 1/2 Spanish onion
  • ½ punnet baby tomatoes
  • 1 diced cucumber
  • 1 diced carrot
  • 1 diced capsicum
  • ¼ avocado
  • 2 tablespoons vinaigrette
  • 1 teaspoon sesame seeds

Combine avocado and vinaigrette in a small cup, mix together and pour over remaining ingredients in a salad bowl. Sprinkle with sesame seeds.
